Discover chats to chef Tom Lodge about his exciting new collaboration with Sussex Food Markets and The Bridge Pub in Shoreham.

Sussex Food Markets, situated in Shoreham is a family owned and operated butcher that has been a staple in the city for many years. Chef Tom Lodge has recently joined the team and shared his exciting new collaboration plans exclusively with Discover Brighton. 

During a trip to Marbella, Tom met the owner of Sussex Food Markets and The Bridge Pub in Shoreham, Jamie Malpass where they developed a plan which they hope will revolutionise the way we shop and eat. 

At the beginning of this month, Sussex Food Markets will be utilising a brand new development kitchen, which Chef Tom revealed is set up like a TV studio. From there, the plan is for him to live stream while he shares recipes using the meat and produce from the site. 

The market will become a one-stop-shop selling not only meat, but also vegetables, fruits, dairy and eggs. The idea being that customers come and purchase goods while learning new ways to cook. 

There will be recipe cards available after each live stream that have a QR code which will allow you to watch a recording, meaning you can recreate the recipes from your own kitchen. There will also be concession stands selling everything from coffee to farm eggs, a total redevelopment offering people an alternative to supermarket shopping. 

The plans don’t stop there. Chef Tom will also be launching his food truck, The Box on the site where he will cook live every Thursday, Friday and Saturday from 11am. You will be able to purchase the food and watch him in action. Tom has been extremely busy and also developed a brand new menu for Jamie’s Shoreham pub, The Bridge. This also launches at the beginning of this month, and Discover Brighton will be there in full force to report back. 

Chef Tom trained under Stephen Terry at the Hardwick in Wales after spending some time at The Ramsey Group at The Savoy Hotel in London. At just 20 years old, he already has five-years experience under his belt. Having worked at a Michelin starred restaurant, Lucknam Park in Bath, he went on to set up and run another pub in Wales and also set up a high-end street food pop up in Cornwall. The young chef also played a vital role at pasture in Cardiff,  seeing them get to no.48 in the world at this year’s steak restaurant awards.
